EGGS - How can you tell if an egg is fresh?

How can you tell if an egg is fresh?

Fill a deep bowl or pan with enough cold tap water to cover an egg.
Place the egg in the water.
If the egg lies on its side on the bottom, the air cell is small and it's very fresh.
If the egg stands up and bobs on the bottom, the air cell is larger and it isn't quite as fresh.
If the egg floats on the surface, toss it.

And: A very fresh egg out of the shell will have an
overall thick white which doesn't spread much and
the yolk will stand up.

We are currently incubating chicken eggs in out classroom. Part of this unit includes keeping a growth chart...predicting when they will begin to hatch ...and finding interesting jokes and facts about chickens and their eggs. Today we are going to try candling a few of the eggs.I will be sure to share your information with my class too.

Ya...um...the candling?...not so eggsciting...we used a flashlight and the kids sooooo missed the point. LOL
Floating/Sinking the eggs made a little more impact. Not sure why.
It gets really eggciting when we crack open the ones that don't hatch so we can compare to the growth chart and see on what day they stopped developing. SMELLY though.
